Mom's Split Pea Soup

This is Glenn's "family tradition"
soup served every Christmas Eve
In a Large stock pot
Peas- 16 oz. bag dried split green peas
6 cups water
3 ribs celery (leave whole)
1 large onion (leave whole)
salt & pepper to taste
Cook till barely done (do not over cook)
Take out onion and celery (discard)
In a Small Pot
1/3 cup rice
3 cups water
salt and pepper to taste
Cook till done- set aside- do not drain
In a Separate pot
3 cups water
3 cups cubed potatoes
salt to taste
Cook till done- do not drain
Add rice and potatoes to peas
Add 1 package Mrs. Grass seasoning packet (sometime mom adds more Mrs. Grass
seasonings) (discard the noodles or use with something else)
In a Skillet
4 Tbsp. bacon grease or oil
3 Tbsp. flour
1 large onion chopped
Brown onion and flour in oil
Add:
3 cup water
Simmer for 10 minutes
Add to pea mixture
Simmer all for 15 minutes.
